Cooked the stock until the meat was easy to pick off the bones. I removed the chicken from the stock and picked all the meat off, returned the rest to the pot and simmers it for a while longer - in all about 4-5 hours. I ended up with 34 cups ofmeat and stock,I put aside 10 cups of stock and 1 cup of meat for the soup and pressure canned the rest. Total cost per cup - $.19.<br /><br />Into the soup pot went the stock, meat, an onion, carrots, celery and a handful of broken up spagetti noodles. The carrots and celery were from the garden. <br /><br /><br />The biscuits were simple baking powder biscuits made from whole wheat flour (from my garden!) some white flour, baking powder, water and about 1/4 cup of vegetable powder I made by grinding some dehydrated garden veggies (broccoli stems and leaves, celery leaves, squash and tomatoe.) Total cost per biscuit $.04.<br /><br />The soup made 2 meals for a family of four for a cost of $.26/serving served with 2 biscuits each at $.04 each - Total cost for meal was $1.36. Didn't quite make it under the $1 mark but I suspect I could have stretched the soup a bit more! Tasty, healthy and cheap.<br /><br />Karin<br /><br />PS - the chicken breast that I reserved I used for the next nights meal, chicken chow mein. I did not do a cost analysis for that meal but as the chicken was "free" - I had already factored the cost of the meat into the stock I made, and most of the veggies were from my cold storage I would think it would have been pretty close to the dollar mark too.]]></description></item><item><title>What this challenge is about. You may use any ingredients but to keep it in the healthy category you will almost certainly have to use some homegrown ingredients.
